Baker’s percentage, without the mystery.

Why flour is always 100%, how to turn the percentages into grams and what hydration numbers leave out.

Give every ingredient the same reference point.

A baker’s percentage is an ingredient weight divided by the total flour weight, multiplied by 100. In a formula with 400 g flour and 280 g added water, the water is 70%. With 8 g salt, the salt is 2%. Flour remains the reference even though it is only part of the overall mixture.

This is not a nutrition percentage or the ingredient’s share of the final loaf. The percentages in the formula are expected to add to more than 100. Our composition tool displays both the baker’s table and a separate total-weight diagram so you can see the distinction.

Run the arithmetic in either direction.

To find grams from a percentage, multiply the flour weight by the percentage divided by 100. At 400 g flour, 5% oil is 20 g. At 750 g flour, the same percentage is 37.5 g. The proportion stays the same while the batch changes.

To aim for a total mixture weight, add all the baker’s percentages, including the flour’s 100. Divide the desired total by that sum and multiply by 100 to find the flour weight. The tool does this automatically, retaining the proportions of the formula you entered.

Be explicit about what counts as water.

A simple flour-and-water dough is easy to describe. Once milk, whole egg, syrups or a preferment appear, the accounting needs a definition. The composition tool deliberately reports added-water percentage. It does not pretend that milk and egg are wholly water, or estimate their water content without knowing the product.

Sourdough starter also contributes flour and water. Use the starter notebook for feeding-ratio arithmetic; do not insert the starter’s full weight into the yeast field. Our composition study models instant dry yeast, not a starter or preferment. A complete sourdough formula must account for both parts.

Keep the number in its proper role.

Percentages make scaling and comparison easier. They do not identify the best flour for a recipe, predict proving time or certify a gluten-free adaptation. Record your flour, method and conditions beside the formula. That turns a tidy set of numbers into a useful working note.

If a computed amount is smaller than your scale can resolve, do not treat the displayed decimal as a measurement you can perform. Choose an appropriate instrument or use a complete recipe with quantities you can weigh reliably.
