Choose the vessel, liquid amount and lid position specified by the recipe. Leave room to stir and check the contents without splashing.
Three things to notice.
- Observe the movement of the liquid rather than the knob number alone.
- Check whether the recipe expects the vessel covered or uncovered.
- Notice changes in the ingredient and liquid level as the method progresses.
Reach for the right tool.
A suitably sized pot, a lid when specified and a spoon that reaches the base.
Keep the limit in view.
A gentle-looking liquid is not a universal food-safety test or a reason to shorten a specified cooking process.
