The correct way to check that food is the right temperature

A clear, step-by-step guide to checking doneness with an instant-read food thermometer: placement, depth, timing and reliable temperatures for common foods.

Use a food thermometer. Insert the probe into the thickest part of the food, avoiding bone, fat and the pan, wait for the reading to stabilize, and confirm the coldest spot meets the recommended temperature. Visual cues like color or juices are not reliable indicators of safety or doneness Penn State Extension, N.C. Cooperative Extension.

Pick the right thermometer for the job

  • Instant-read (digital or dial): Fast spot checks toward the end of cooking; not designed to stay in the oven or on the grill. Response time depends on the model, so follow its stated response time and wait for a stable reading Penn State Extension, N.C. Cooperative Extension.
  • Oven-safe/dial probes: Can remain in large roasts or whole poultry during cooking; slower to register and require deeper insertion (to the sensing zone) N.C. Cooperative Extension.

If you also need to verify oven temperature for baking, see our explainer on using an oven thermometer.

How to take an accurate instant-read temperature

  1. Identify the thickest part of the food. For whole pieces, this is usually the center of the thickest area. Avoid bone, large pockets of fat and the pan or grill grates N.C. Cooperative Extension.
  2. Place the sensor correctly. For digital instant-reads, the sensing is at or near the tip; for dial/bimetal instruments, the sensing length may extend along the stem to a dimple. Confirm that model’s minimum insertion depth Penn State Extension, N.C. Cooperative Extension.
  3. Use a sideways insertion for thin foods. Slide the probe in from the side so the tip reaches the center of thin patties, chops or fillets Penn State Extension, N.C. Cooperative Extension.
  4. Wait for the temperature to stabilize. Use the instrument’s stated response time; there is no single delay for every digital or dial thermometer Penn State Extension.
  5. Find the cold spot. Especially with large pieces or casseroles, check more than one location and use the lowest reading as your decision point Penn State Extension, N.C. Cooperative Extension.

Worked examples

Ground beef burger patty (illustrative thickness: about 1 inch): Tilt the patty with a spatula and insert a digital instant-read sideways to the center. Wait for the reading to steady; confirm at least 160°F (71°C) before serving. A ground chicken or turkey burger instead requires 165°F (74°C) under the FoodSafety.gov guidance Penn State Extension.

Chicken thigh: Insert the probe into the thickest part of the meat without touching bone. Wait for a stable reading; confirm at least 165°F (74°C) in the coldest spot you find Penn State Extension.

Instant-read thermometer quick-check list

Keep your thermometer accurate: quick calibration checks

  • Ice water method: Follow the maker’s checking procedure, placing the full sensing zone in a stirred ice-water slurry without touching the container. Allow its specified settling time; the expected reference is 32°F (0°C), within the instrument’s rated accuracy Academy of Nutrition and Dietetics.
  • Boiling water method: Only if the maker recommends this check, immerse the sensing section to its specified depth without touching the pot. The reference is about 212°F (100°C) at standard sea-level pressure. Water boils at lower temperatures at altitude, so adjust expectations accordingly Academy of Nutrition and Dietetics.
  • Adjust or replace: Adjust only if the maker provides a calibration procedure. An out-of-tolerance instrument may need service or replacement; do not improvise an adjustment or submerge an electronic housing unless it is rated for that use Academy of Nutrition and Dietetics.

Mistakes that cause false readings

  • Trusting color, juices or texture. These do not reliably show internal temperature or safety Penn State Extension.
  • Touching bone, fat or cookware. These spots can read hotter or cooler than the edible portion N.C. Cooperative Extension.
  • Leaving an instant-read in the oven. Instant-reads are for spot checks only; use an oven-safe probe if you need continuous monitoring N.C. Cooperative Extension.

FAQ

How deep should I insert the probe? For digital instant-reads, ensure the tip reaches the center of the thickest part. For dial/bimetal thermometers, insert to the stem’s dimple so the sensing zone is fully in the food Penn State Extension, N.C. Cooperative Extension.

What if the temperature drops when I move the probe? That means you found a colder spot. Keep measuring until the lowest reading you can find meets your target; that’s the safe decision point Penn State Extension.
